This vegan apple crumble will remind you of Grandma’s cooking, with hints of sweet cinnamon, warm ginger and fresh apples topped with a buttery crumble. While simple to make, it delights every time. Recipe developed by AGA Australia.
Preheat the oven to 160°C (conventional) [if you’re using an AGA oven, preheat the Baking oven to the same temperature].
In a medium bowl, combine the spices, flour and sugar, then rub in the Nuttelex using your fingertips to form crumbs. If the mix appears doughy, add a pinch of flour until it reaches the desired consistency. Put the bowl in the freezer to chill for 15 minutes.
Core the apples and cut each into roughly 8 slices. Combine the rest of the filling ingredients, except the yoghurt, and stir to combine. Mix in the apple slices with a spoon or spatula.
Transfer the filling into a deep pie dish, around 25cm wide, and smooth it out. Spoon over the crumb mixture and bake for 1 hour and 15 minutes or until the crumble is golden brown. Cover with foil or a lid if the crumble starts getting too dark. Let it cool for around 10 minutes, then serve warm, with coconut yoghurt.
