5 Bruschetta Toppings to Try Next

Bruschetta is an undisputed classic for appetiser boards and whilst the trifecta of chopped tomato, basil leaves and extra virgin olive oil never fails to hit the spot, these five flavour combinations invite you to explore something a little different, but still as satisfying, that you’ll also want to whip up for your next work-from-home lunch or afternoon snack. The common denominator for all of them? The Bruschetta Blend, a finishing blend featuring a mix of red bell pepper, garlic, chives, onion, parsley, caraway, cumin, fennel, and thyme, that was created specifically to enhance the flavour of tomatoes and add a touch of Mediterranean flare to grilled vegetables, fish and cheeses.


1. Confit tomatoes bruschetta

Slow roast your cherry tomatoes with plenty of olive oil, a few cloves of garlic, a pinch of salt and pinch of sugar until soft and shiny. Slather a thick layer of ricotta over some toasted bread, sprinkle with the Bruschetta Blend and top with the confit tomatoes. Add a dash more of Bruschetta Blend and serve whilst still warm.


2. Grilled zucchini bruschetta

A classic of summer BBQs, the smokiness of grilled zucchini pairs well with the rich and tangy notes of whipped feta. To make whipped feta, blitz half a block of feta with a couple of tablespoons of Greek yogurt, a squeeze of lemon juice and a drizzle of honey, if you like a subtle hint of sweetness, in a food processor until smooth and fluffy. Spread over toasted bread, top with grilled zucchini (we love cutting them into ribbons for a perfect cheese to veggie ratio) and sprinkle generously with Bruschetta Blend.


3. Grilled peaches and prosciutto bruschetta

Sweet, salty, creamy, tangy, herbaceous – this recipe has it all! Choose some ripe, but still firm nectarines and grill them in segment on the BBQ. Then lay out a generous layer of ricotta, top with peaches and nest some rolled up prosciutto slices in between them. Top with a few basil leaves and plenty of Bruschetta Blend to season.


4. Sardines and ox heart tomato bruschetta

This is admittedly a very simple recipe that only requires assembly, but we love the combination so much we had to share it! Finely slice some ox heart tomatoes and season them with extra virgin olive oil and Bruschetta Blend. Drain some good quality sardines and place them on top. Add some thinly sliced onion for added zing and top with an extra pinch of Bruschetta Blend to bring it all together.


5. Smashed avocado bruschetta

This recipe needs no introduction and it’s likely that you’ve had this combination in one form or another many times before. But – hear us out – you will not regret adding the Bruschetta Blend to your next iteration. Smash a ripe avocado with a few tablespoons of feta and a squeeze of lemon juice and pack it on a slice of toasted bread, add some tomatoes (we love the heirloom variety for this recipe!) and top generously with Bruschetta Blend. You’ll thank yourself for giving it a go.
