Melt the butter in a small pan over low heat. Add the rub and stir to mix well. Set aside to cool slightly. Place the prawns into the butter mix and stir to coat.
Heat up a pan (preferably cast-iron) over high heat and brush it with olive oil.
Shake off the excess butter from the prawns and add them to the pan. Cook them for about 1–2 minutes on each side or until almost cooked through.
Turn the heat to low and pour in the remaining butter mix. Let it sizzle until the butter is slightly browned. Turn off the heat and serve immediately over a bed of salad leaves and some lemon wedges.
