Make a marinade by mixing the spice blend with the olive oil.
Coat the chicken with the marinade and let it rest for at least 15 minutes for a quick meal, or overnight for more intense flavour.
When ready to cook, pre-heat your bbq and get the grill as hot as you can.
In the meantime, mix the chopped vegetables with the chicken so they are coated with the marinade.
Assemble your skewers by threading the chicken and the vegetables, alternating between them.
Cook skewers for 3-4 minutes on each side, or until the chicken has cooked through. Remove from the heat, drizzle with lime juice and top with coriander. Serve with warm tortillas and a dollop of sour cream.
