Cube the chicken into 2cm pieces and transfer it to a bowl. Rub it with the Souvlaki Spice Rub, coat it with olive oil and thread it onto metal skewers. Alternatively, you can opt to cook the chicken thighs whole.
Optional: Cover and marinate the meat in the fridge for 15 minutes, or overnight for a deeper flavour.
Cook the chicken over a hot grill, BBQ or frypan until cooked through, approximately 15 minutes.
Let the meat rest for a few minutes before serving. If you cooked the thighs whole, slice them into thin strips. Drizzle with lemon juice and season with salt to taste.
To serve, spread a generous amount of tzatziki on each pita bread, then layer the cucumber, red onion, cherry tomatoes, parsley and chicken pieces on top of it. Fold in half to serve.
