Ingredients

2 large eggs
1-1 ½ tbsp egg yolk mayonnaise, such as Kewpie
2 slices of white sandwich bread, to serve

Any one of the below spices:

1/2 tsp Japanese Curry Blend
1 1/2 tsp Korean Gochugaru Blend
2 tsp Everything Bagel Blend
3 tsp Smoky Almond Dukkah
¼ tsp Bavarian Chicken Spice
1 tsp Italian Herbs

Directions

Add the eggs to a pot of boiling water and boil for 8 minutes. Remove from the pot and transfer to a bowl filled with icy water.
Once cooled, peel the eggs and add them to a bowl. Mix in the mayonnaise and your choice of spice and mash to combine.
Spread the egg mixture over one bread slice and top with the second bread slice. Cut the sandwich into 4 squares and serve.
