Preheat the oven to 180°C (conventional). Place the brie in a small oven proof dish.
In a small saucepan, brown sugar, honey and butter.Bring to a boil on medium high heat, while constantly moving. Reduce to medium heat and simmer for 2 mins without mixing.
Take the saucepan off the heat and add the bicarbonate soda, whisking continuously. Mix in the cranberries, pistachio, spice, and salt and stir to combine.
Pour the mixture over the brie. Bake for 10 minutes or until the cheese is soft. Serve with a crusty baguette or crackers.
