Drizzle the pork steaks with olive oil and a pinch of salt and let them come to room temperature.
Make the drizzle sauce by melting the butter over low heat, add the grated garlic and let it infuse for 1-2 minutes, or until fragrant. Mix in the lemon juice and saltbush and let it infuse for another minute. Turn off the heat and set aside.
Pre heat a cast iron pan until very hot and place the pork on it to brown, about 3-4 minutes. Then, flip it and cook for another 3-4 minutes. When the pork is about a minute from being done, strain a third of the butter sauce over it (try to avoid the garlic from getting in the pan, or it’ll burn) and turn the heat to low.
Once cooked, transfer the pork to a plate, drizzle with the remaining butter sauce and cover for 2-3 minutes. Serve immediately.

Tip: For an extra dose of Australian flavour, try the saltbush butter sauce on grilled lamb cutlets. Also delicious on chicken breast.
