To a frying pan over medium heat, add oil, shallots and garlic and gently stir fry until the shallots have softened, about 4-5 minutes.
Add the carrots and fry for 3 minutes. Then add the prawns, broccoli and Laksa Lemak blend, and fry until the spice is fragrant and the prawns are cooked through, about 5-6 minutes.
Add the cooked noodles and fish sauce, and stir well to coat.
Serve with lime wedges, finely sliced red chilli and crushed peanuts.
