Preheat the oven to 160°C. Line a baking tray with baking paper. Mix up to 1 tablespoon of water with the honey so it becomes more fluid. Whisk together with the egg white to combine. Add in spice and sugar, and whisk to thoroughly combine.
Combine with almonds to thoroughly coat.
Spread coated almonds over baking paper and place into pre-heated oven. Rotate the tray after 15 minutes and stir the almonds. Continue this until they are dried out and candied. This will take up to 1 hour, depending on how large your tray is.
Cool on baking paper. Your almonds last well if you keep them airtight.
