Cut your pork into thin pieces (approximately 5 cm x 3cm).
Place it in a bowl with Souvlaki Spice Rub and olive oil. Mix well to coat the meat evenly.
To make the pork gyro, heat a large frypan with a drizzle of olive oil. Add your marinated pork and cook for about 15 minutes, stirring constantly until the pork is browned and cooked through. Set aside.
For your first skepasti, take two large pita breads and lay them out next to each other on a flat surface. On the first pita bread spread a light layer of tzatziki then sprinkle on some tasty cheese.
For the second pita bread, spread another light layer of tzatziki, followed by a sprinkle of tasty cheese and half the pork gyro (make sure it’s spread evenly over the pita). Add slices of tomato and sliced onion on top.
Place a second large frying pan over medium heat. Place the first pita bread on the pan, cheese side facing upwards. Toast on medium-low heat until the cheese shows sign of melting, taking care not to burn the pita bread. Once the cheese has melted slightly, use a large spatula to transfer the pita bread to a large plate (cheese side still facing up).
Place your second pita bread (pork gyro side facing up) into the heated pan. Carefully, take your first pita bread with the melted cheese and flip it upside down onto the pork gyro pita bread (so the cheese is now touching the gyro).
Using your spatula gently press down on the Skepasti to flatten it.
Once the bottom of the Skepasti is slightly golden, remove from the pan and transfer it to chopping board. Cut into quarters using a sharp knife or pizza cutter.
