Whisk the eggs, honey, milk, chai masala spice and salt in a large shallow dish.
Soak the bread slices in the egg mixture for 2 minutes on each side.
While the bread is soaking, prepare the figs by slicing them in half lengthways. Place the figs skin side down in a heatproof dish.
Preheat the oven grill on HI heat.
Combine the butter, honey, cinnamon, water, orange juice and zest in a bowl.
Decant over the waiting figs and place them under the hot grill to blister for 5-6 minutes. Set aside until they are ready to be serve.
Heat a small drizzle of oil and a knob of butter in a frying pan together. Cook the egg-soaked bread slices over MED heat for 2 minutes on each side or until golden.
To serve
Serve the French toast with a generous dollop of yoghurt, a fig with sauce and a sprinkling of Cardamom Pistachio Sugar.
