A quick & delicious pasta dish featuring all the mediterranean flavours, perfect for the warmer days. Finish it off by drizzling Italian Chilli & Garlic Oil Blend for a little kick and a smooth silky finish. You’ll have this dish on the table in under 30 minutes.
Heat the oil in a frypan over high heat. Add the prawns and cook them for 1-2 minutes or until cooked through. Remove from the pan and set aside in a bowl.
To the same pan add the chilli oil and onion, reduce the heat to medium and cook until soft. Add the cherry tomatoes and cook for 2 minutes. Add the diced tomatoes, salt and pepper. Cook for 15 minutes on low heat.
While the sauce is cooking, cook the pasta according to packet instructions.
Drain the pasta and reserve ½ cup of pasta water. Add the pasta to the frypan along with the prawns and parsley. Splash in the pasta water and toss to coat.
Drizzle with extra chilli oil and serve with parmesan cheese.
