Preheat oven to 80°C. Whisk egg whites with salt until they form peaks.
Add half the sugar and whisk until shiny. Add the other half of sugar and Coco’s Organic Coconut Blend. You can either use a piping bag or just use 2 teaspoons to form small dollops.
Place on a tray lined with baking paper. Put straight into the oven for about 2 to 2 ½ hours, placing a wooden spoon into the oven door to keep it slightly open.
Recipe Note
Your meringues are ready when you can pick them up without them sticking to the paper. Allow to cool on a cake rack.
