Native to South America & banned in the USA, the tonka bean is a foodie's dream ingredient. Hard to find, lethal in large doses & enticingly delicious, its almondy sweetness is reminiscent of marzipan and vanilla. Grate just a quarter of a bean into desserts such as panna cotta, blushing peaches, custard or ice cream.
